Vinification
Perséis, in the domaine's Greek mythology, is the daughter of Ocean and the beloved of Helios, a daughter of the West and of the setting sun. The wine is pure Vermentino from clay and limestone soils at Montady, where the vines sit between the Canal du Midi and the Oppidum d'Ensérune. In 2024 the grapes were harvested by machine at aromatic maturity, picked for freshness rather than weight. A slow, gentle pressing extracts only the cleanest fruity juice, which is then separated from its solids and fermented cool in tank to protect the aromatics. The finished white is bright and tense at just 12% alcohol: citrus on the nose, an attack full of energy, a mineral, mouth-watering middle and a long finish on grapefruit.

Perséis is the wine we pour when we want to show what Vermentino can do away from the Italian coast. The 2024 is leaner and more energetic than the vintage before it, built on tension and citrus rather than weight, which makes it an effortless aperitif. Serve it well chilled with hummus or a savoury pastry, then move on to seafood or grilled fish, where that grapefruit finish comes alive. The producer's parting suggestion is tarte tatin, and the wine's freshness lets it carry the match. Bright, precise and unpretentious, this is southern white wine with a cool head.
