Vinification
Éos takes its name from the goddess of dawn, who each morning shows the way to her brother Helios, and it is the palest, most delicate red in the range. It is pure Cinsault from clay and limestone soils between the Canal du Midi and the Oppidum d'Ensérune, picked by machine at full ripeness. Fermentation runs cool in tank, with a gentle daily pumping over to draw out perfume and colour without hard extraction, and the malolactic fermentation is completed under the cap of marc. The wine is bottled unfined. At a light 11.5% alcohol it stays true to its grape: raspberry and peppery violet on the nose, a chiselled attack, a juicy middle of red fruit, and a fresh finish carried by fine acidity and very supple tannins.
Importer's notes
We brought in Éos because light, chillable reds are what we reach for most often ourselves, and this one plays the style with unusual finesse. Cinsault at 11.5% is a rare pleasure: all perfume and juice, nothing heavy, a red that behaves almost like a white. Serve it well chilled and it will carry a whole evening, from a plate of charcuterie through most things off the grill, and it is a quietly brilliant partner for raclette. The producer even suggests pavlova, and with that acidity the match works. This is the bottle we open when the company matters more than the ceremony.
