Ellipse is Bersan’s modern statement of Aligoté: a certified-organic cuvée from Saint-Bris-le-Vineux grown deliberately at low yields, treated with the care that lets this variety act as the excellent sponge for terroir it can be. In the cellar it follows the rule that runs through the whole Bersan range: gentle pneumatic pressing and fermentation with indigenous yeasts alone, without added enzymes, so that nothing stands between the grape and the glass. The wine opens with the lively attack that is Aligoté’s signature, then turns unexpectedly fine, with citrus and a cool note of fern, freshness and elegance, and a long, precise finish.
