Bersan’s Bourgogne Aligoté comes from vines of thirty to sixty years planted around Saint-Bris-le-Vineux, on the Portlandian limestone plateaus and Kimmeridgian clay-limestone slopes that define the Grand Auxerrois. The grapes are pressed gently in a pneumatic press and fermented with indigenous yeasts alone: no added yeasts, no enzymes, simply the natural work of the must. The wine is then raised entirely in stainless steel to preserve the variety’s spring-like freshness. Pale gold in the glass, it opens on acacia, hawthorn and fresh apple, and the tender, flowing palate wakes up the taste buds before finishing on a signature note of hazelnut.

This is the wine that shows why Aligoté is enjoying its renaissance: bright, unpretentious, and quietly delicious. We love it as the house aperitif it was born to be. Serve it at 8–10 °C before the meal, or a touch warmer at the table with grilled fish, oysters or goat cheese; it is also one of the rare wines that gets along with salads and steamed vegetables. Certified organic and keenly priced, it is everyday northern Burgundy at its most charming.
