Bersan’s Chablis grows on the hillsides of Préhy, at the southern edge of the appellation, where thirty-year-old Chardonnay vines stand on the Kimmeridgian clay-limestone that gives true Chablis its stamp. The winemaking is deliberately transparent: gentle pneumatic pressing, fermentation with indigenous yeasts only, without added yeasts or enzymes, and raising entirely in stainless steel, so nothing blurs the terroir. Pale gold, with a fresh, keen nose of flint and lemon, it carries a warm floral touch of orange blossom over a supple palate before a tonic, mouth-watering finish. Bone dry, and unmistakably Chablis.

Importer's notes

The name Chablis is borrowed on five continents, as the Bersans like to point out, but there is only one real one, and this is it, made by a Saint-Bris family from vines in the neighbouring Chablisien. We value it for its precision: very dry, very fine, with the mineral cut that only Kimmeridgian soil delivers. Serve at 10–12 °C; it is grand on its own as an aperitif, and the producer’s pairing list is a joy: fish terrines, grilled or poached fish, asparagus, sushi, even a curry, and cheeses from goat to Comté. A benchmark bottle at this price.
