Vinification
Source is a certified organic Melon Blanc, the grape variety behind Muscadet, grown on the granite and shallow stony soils of Château-Thébaud, one of the most respected corners of the Nantes vineyard. The hand-harvested fruit ferments naturally with wild yeasts at 16°C, then rests for seven months on its fermentation lees in stainless steel, without malolactic fermentation and with only light filtration. That slow aging on lees builds texture and preserves the variety's delicate aromatics. The finished wine is dry, fragrant, and has a gentle savoury bitterness on the finish.
Importer's notes
Melon Blanc does not get the attention it deserves, and Source is our argument for why it should. The granite soils of Château-Thébaud give it a freshness and mineral edge that makes it one of the best food wines in the range. It practically asks for oysters, mussels, or any fresh seafood, but it also works beautifully with light fish dishes or just on its own, cold, on a warm day. Serve well-chilled, around 8°C. Certified organic.
