Vinification
Courant is a dry Chenin Blanc from Sainte-Mélaine-sur-Aubance, near Angers, where the vines grow on sandy loam over blue schist. Schist is a rock that gives wines a cool, mineral character, and you can feel it in this wine. The grapes are hand-harvested and fermented naturally with wild yeasts at 16°C. No malolactic fermentation: skipping it keeps the acidity intact and the wine fresh. After fermentation, it rests for seven months in stainless steel on its lees, unfined and lightly filtered.

Where Roche is about richness, Courant is about freshness and precision. It is Chenin at its most direct: citrus-edged, mineral, and easy to love. We reach for it as an everyday white that is simple to match with food. Serve well-chilled, around 8°C, with oysters, seafood, grilled fish, or a bit of cheese. No ceremony needed. Certified organic.
