Vinification
Made entirely from Pinot Noir, the same grape used for red Burgundy, grown just a few kilometres from the Burgundy border. The grapes are picked by hand and pressed gently to give a clear juice without any colour from the skins. Fermentation takes place in stainless steel tanks. No sugar is added at disgorgement (Brut Nature, 0 g/L), so the balance comes purely from the grape and the vintage.
Importer's notes
This is our starting point with Piconnet, the wine that got us interested in the first place. It has a richness you don't always find in Champagne at this price, probably because Pinot Noir from the Côte des Bar has a lot in common with Burgundy. Good as an aperitif, even better with food. Try it with grilled chicken, charcuterie, or anything mushroom-based. Serve well chilled at around 8 °C. Certified organic.
