Vinification
A blend of all three grapes grown on the estate: Pinot Noir, Pinot Blanc, and Chardonnay. Each is harvested by hand, pressed separately, and fermented in stainless steel tanks before being blended together in March. Pinot Blanc is a traditional Aube variety that is now quite rare in Champagne. It gives the wine a fuller, earthier quality that sets it apart. No sugar added (0 g/L).
Importer's notes
This is the wine that tells you most about who Piconnet are. Three grapes, one estate, zero dosage. What you taste is exactly what came from the vineyard that year. The Pinot Blanc in particular gives it a slightly different feel from most Champagnes: rounder, less sharp, a little more food-friendly. Works well from aperitif all the way through a meal. Serve at 8-9 °C.
