Pièce Maîtresse is the estate's main cuvée and the one that best shows what Bastien is doing in Vandières. It blends equal parts Meunier and Pinot Noir with a small addition of Chardonnay, all from the 16 certified organic plots spread across 10 kilometres of the Marne valley. Each press load goes into its own stainless steel tank: the estate runs 12 thermoregulated tanks with a total capacity of 39,600 litres, and keeping every parcel separate is the starting point. Around 10% of the wine is aged for a year in old Burgundy white wine barrels, including former Meursault casks, to add texture without any oak flavour. Malolactic fermentation is always carried out. The wine was bottled in spring 2022 and aged on its lees for 36 months before disgorgement, followed by at least 5 months of rest. Dosage: Brut, 2 g/L.

Three grapes, 36 months, and very precise fruit from a tightly mapped terroir in the Marne valley. That is Pièce Maîtresse in brief. The low dosage of just 2 g/L keeps it dry and direct, and the long aging on lees gives it weight without heaviness. We find it works at the table as well as it does as an aperitif: good with roast chicken, creamy fish dishes, mushrooms, or a firm cheese. Serve at 9 to 11°C. Certified organic.
