Vinification
Chemin de Trotte comes from a single plot of 0.95 hectares on the western hillsides of Vandières: one place, one grape variety, one vision. The wine is a Blanc de Noirs made entirely from Meunier, the variety that has been the backbone of the Moreau estate since the beginning. It is made the same way as the rest of the range: thermoregulated stainless steel tanks for the majority, with 10% going into old Burgundy white wine barrels for a year. Light filtration, malolactic fermentation always carried out. Bottled spring 2024. Dosage: Brut Nature, 1.6 g/L. Only 700 bottles per release.
Importer's notes
Chemin de Trotte is the estate's most focused wine. One parcel, one grape, and a dosage so close to zero that nothing stands between you and the fruit from that specific hillside in Vandières. Production is tiny at 700 bottles. When we find stock, we take it. This is a Champagne for people who want to understand what Meunier can really do when it is handled with care. Serve at 10 to 12°C and give it a moment in the glass before drinking. Certified organic.
