Vinification
Sandstone is estate Chardonnay from the certified sustainable vineyard on Cayuga Lake, and it takes its name from the vessel that shapes it. The fruit is harvested by machine in the cool early morning, sent straight to the press, gently pressed and left to settle overnight. The juice then ferments spontaneously in a sandstone jarre, an amphora whose fine, porous stone lets the wine breathe gently. It ferments to a dry finish, completes malolactic fermentation and stays in the sandstone for eight months. The result is a full bodied, dry Chardonnay with notes of fresh fennel and white grapefruit, a soft, silky texture and a long finish. 222 cases were produced.
Importer's notes
This is the Chardonnay we pour for people who say they do not like Chardonnay. There is no oak here, only fruit, stone and time, and that gives a wine that is generous and silky yet stays fresh and clear. It is one of the winery’s best sellers. Serve it around 11 °C, not too cold, so the texture can show. It is lovely with grilled prawns and a citrus butter sauce, and just as good with shellfish and white fish in general.
